- 1Place a large, heavy-bottomed pot over medium heat. Pour the spices into the pot and gently toast until fragrant, about two to three minutes.
- 2Stir in the oil and onion, and cook until softened. Add the bell pepper and zucchini, and cook for five more minutes.
- 3Toss in the meat and orange juice. Turn the heat to high and bring the ingredients to a boil until the meat is cooked. Stir in the raisins.
- 4Once the mixture is boiling, stir in the couscous and remove from heat. Cover the pot and let stand for five minutes.
- 5Before serving, fluff the couscous with a fork.
